This particular sourdough starter may demonstrate the relationship between Acetobactor Malorum and functional diversity. Sample 522 contains a fair amount of AM, 6 of the 8 LAB/yeast taxa, as well as 3 other minor bacteria. The primary voices in this starter are Ace Malorum, S. Cerevisiae and L. Sanfrancisensis, with S. Cerevisiae dominant. First we hear Ace Malorum within the watery realm of AAB out of which emerge the four less dominant taxa (L. Plantarum, L. Paralimentarium, W. Anomalus, K. Brevis) whose motifs are now long notes in random order. Out of this spectral milieu arises first L. Sanfranciscensis and then S. Cerevesiae. The watery realm of AAB and the four taxa can be heard around the edges as S. Cerevisiae and L.Sanfranciscensis engage in sonic interplay and then fade out as the the four supporting taxa arise in sonic resonance with S. Cerevisiae (the dominant) and drift off into VOCs.
