Ace Malorum and the AABs
The sound of AABs are burbly, watery waves that transform by the end of the process into the gaseous sweet and sour smells from a starter (Volatile Organic Compunds). Previous sourdough research paid little attention to AAB because they only seemed present at the beginning of sourdough starter formation then they "disappear" from sight. The Sourdough Project found that AABs were key drivers in the functional diversity within the sourdough starters sampled, and were associated with the end product VOCs of each starter. Acetobactor Malorum is a primary AAB identified in the study, so it gets its own soundscape. Whenever Ace Malorum is present in a particular starter or process, slices of this piece will be heard. There are 8 other AABs identified in The 500, so they are represented et al by watery burbling gases and the "high note" frequencies of Volatile Organic Compounds (VOCs) - listen for those to come in after the actual sound has ended.
